The vineyards chosen for the making of
this wine are carefully selected and harvested at optimum ripeness. Choosing
a longer maceration allows us to extract all compounds bringing structure and
consistency. This wine is aged for twelve months in oak barrels, 30% new oak
to add more complexity while having a very good balance. |

The « Cuvée Petit Port » is a
special selection of merlot. The vines are located on a soil composed of clay
and lime. We are looking for a good ripeness of the grapes, and after the
harvest, we plunge the skin in the must. Thus, we extract with this sweet
process, black fruits and violet aromas. The aging in stainless steel tank
allow us to keep a good balance between the fruit and the fine tannins of
this red wine. |

The vines have been chosen to give a
fruity and pleasant wine together with full-body and structure. After
picking, the grapes are processed using extraction techniques adapted to suit
the vintage and the particularities of this wine. The wine is aged in
stainless steel vats for twelve months to preserve the fruity character of
the wine. |

Cuvée Les Réscapés (The survivors) This wine is a blend of 50% Malbec et 50% Merlot. This is a result of
a project after the spring frost of 2019 the 5th of May, which
destroys 75% of the production. It was a way for us to pick our self-up
against this disaster which hit our vines since 2016. We selected only the survivor’s buds, that is why we named our wine
thus. This wine is very untypical, on the nose, we have notes of pepper and violet.
On the mouth, the tannins are very round, this is the identity of the Château
Les Pâques. |

This wine is fermented in new oak
barrels. It is then aged on fine lees in French oak barrels with regular
stirring (bâtonnage). Thus, Délice des Pâques has a roundness and subtlety on the palate. |

After a short maceration, this Sauvignon
Blanc is vinified, in an air-free environment, to maintain its pale yellow colour and an explosion of fruit on the palate. This wine
is aged on the lees for four months with regular stirring (bâtonnage) in order to gain its
full body and roundness. |

|
Château Les Pâques “Rosé” Bordeaux The colour that
we are looking for with this rosé is obtained by the maceration time. The
wine making takes place in an air-free environment to prevent the oxidation
of the colour and the aromas. The wine is on fine
lees for four months to bring a roundness and a sweetness to the palate. |
